York, Pennsylvania. (September 30, 2008) Wolfgang Candy Company in York, Pennsylvania, is once again hosting a prestigious group of national and international chocolate chefs and manufacturers for a four-day course in Chocolate and Compound Manufacture and Use, offered through the Pennsylvania Manufacturing Confectioners Association, PMCA. From, Tuesday, October 28 through Friday, October 31, 2008, chocolate students will review the science of chocolate and compound manufacturing, chocolate-making, specialty chocolate manufacturing and quality control processes. In addition to the Wolfgang Candy Factory hands-on experience, the attendees will tour the Blommer Chocolate Company and Readco Kurimoto.

Wolfgang Candys Managing Partner, Michael Schmid shares that he is honored to host this seminar again, saying, PMCA programs attract premiere chocolate manufacturers from all around the world. Their courses provide fabulous opportunities to learn techniques and best practices from one another and to develop vital relationships with other quality-driven manufacturers.

Robert L. Wolfgang III, Managing Partner, Food Safety and Quality, explained, Most importantly, I think PMCAs chocolate school provides Wolfgang machine operators and technicians with the theory and science behind what they do every day. It gives them yet a more fundamental appreciation for their craft.

Yvette Thomas, Administrative Director, PMCA, said, There is no training to match the live experience in a production facility, and in-plant training represents the most relevant, student preferred and most valuable educational experience. Wolfgang Candy Company has hosted PMCAs Chocolate course for many years, helping to make it one of the associations top course offerings. Companies, like Wolfgang Candy Company, who graciously open their doors to these students are helping to secure the transfer of quality information and training to future generations of confectioners and are helping to maintain the health and integrity of the industry.

Schmid reflects, Hosting PMCAs Chocolate School is the quintessential experience for Wolfgang Candy to interacting with some of the foremost chocolatiers in the craft.
