The approach of the holidays have us thinking of tradition. One of our favorite recipes come from our Pennsylvania Dutch roots…the classic chocolate whoopie pie.

For the dough:

2 cups all-purpose flour
1 cup sugar
1/2 cup cocoa powder
3/4 cups milk
2 large eggs
6 tbsp melted butter
1 tsp baking soda
1 tsp vanilla extract
1/4 tsp salt

For the filling:

6 tbs softened butter
1 cup confectioners sugar
1 jar of marshmallow fluff
1 tsp vanilla extract

Directions

1. Preheat the oven to 350 degrees F.
2. In a large bowl mix together all of the dough ingredients.
3. Drop dough onto two large greased cookie sheets.
4. Bake for 14 minutes, switching racks upper and lower halfway through baking. Once they’re finished place on cooling rack.
5. In a kitchen mixer bowl, beat together the butter and confectioner’s sugar until smooth. Add in the marshmallow fluff and vanilla until smooth.
6. Before you add the filling to the cookie, make sure your cookie is entirely cooled, otherwise the filling will just melt off. Enjoy!
